This one is a new conference Sunday tradition – So good! Everything with Buttermilk is a must make.
Homemade Blueberry Buttermilk Pancakes –
Ingredients:
1 ¼ cups flour
2 Tablespoons light brown sugar
1 ½ teaspoons baking powder
¼ teaspoon salt (coarse salt if you have it)
1 cup low fat buttermilk
½ cup whole mile
2 large eggs
2 tablespoons unsalted butter (melted)
1 ½ blueberries (don’t mix into batter)
Directions:
If you are a crazy chef then mix the dry ingredients in one bowl and the wet in another then whisk them together. If you are like me just put them all (minus the blueberries) in the kitchen aid and mix them together to make your batter.
Poor ¼ cup batter on greased skillet and sprinkle 2 tablespoons of blueberries onto the surface of each. Cook them until they are done.

Yummy! You are so good to make them from scratch, my kids are lucky of they get pancakes from Bisquik (just add water) mix.

I'm a bisquik girl myself. but... I will try these, and prob. never do bisquik again...
